Warmed small cappuccino cup (5 oz)
(same as double espresso cup)
Warmed regular cappuccino cup (10 oz)
1 shot of Kimbo espresso (small)
2 shots of Kimbo espresso (reg)
Prepare espresso shots in the appropriate cups, according to the size. Pour cold, fresh and preferably whole milk in a jug. Turn the steamer on, positioning the jug in a way milk will spin. Remember to check the temperature, positioning your hand on the side of the jug. Positioning the steamer close to the surface will allow air to go in and create foam, making it double its initial size. Turn the steamer off when the jug is too hot to touch (60°C).
Get rid off any bubbles by banging the jug on a table/bar, then spin the milk to make it shiny and consistent. Poor the steamed milk, dropping the front of the jug quickly to get the foam out.Foam should be 1.5cm + thick.
